What is the difference between an 8" "Cook's Knife", and an 8" Chef's Knife?

The respondant "Ken B" is right, I am a former chef and have a collection of 45 knives of various types sizes and makers, it is all in the makers designation.

Along with the names, there is some difference in the steel used all are now made with a modifed carbon and stainless mixture, forged in most cases the less expensive ones are not forges but stamped from sheets of steel. The more popular ones like Victorinox, Henkel and Wurstof-Trident and forged from a piece of hot steel.
